Salad Ingredients

  1. 1 cup cooked Quinoa
  2. 1/4 teaspoon Papa Vince Sea Salt
  3. 1/4 teaspoon pepper
  4. 1/2 tablespoon Papa Vince Extra Virgin Olive Oil
  5. 1/2 lemon juice
  6. 1 Teaspoon Papa Vince Balsamic Wine Vinegar
  7. 1 cup halved cherry tomatoes
  8. 1/2 cucumber, seeded and chopped
  9. 1/2 cup thinly slice roasted red peppers
  10. 1/4 cup olives
  11. 2 tablespoon red onion, thinly sliced
  12. 1 tablespoon fresh parsley
  13. 1/2 avocado, chopped
  14. 1 cup chikpeas
  15. 1/4 teaspoon garlic powder
  16. 1/4 cup chopped red bell pepper

 

Dressing Ingredients

  1. 1/2 avocado
  2. 1/4 vegan mayonnaise
  3. 1/4 teaspoon Papa Vince Sea Salt
  4. 1/4 teaspoon pepper
  5. 1/2 lemon juice
  6. 2 tablespoon fresh dill
  7. 1 tablespoon agave
  8. 1 tablespoon dijon mustard

 

How to Make

In a bowl, mix all the ingredients; add the avocado; and ad the dill sauce
