Apple Cake with Extra Virgin Olive Oil

This is a special recipe from the Papa Vince family kitchen.  This apple cake makes a wonderful healthy dessert that the whole family can enjoy.

Here is my mom with the apple cake that she just made.  If you decide to make it, please send us some photos, we'd love to see which recipes you're making at home!

 


 Apple Cake with Raw Extra Virgin Olive Oil:

  • Preparation Time: 1 hour & 40 minutes
  • Active Cooking Time: 50 min
  • Yield: 10 servings 

Ingredients:

  • Flour: 200 gr (7 oz.)
  • Sugar: 150 gr (5.3 oz.)
  • Eggs : 3
  • Milk : 125 gr (4.4 oz.) (Yes, you have to weigh the milk!)
  • Yellow Apples: 4 medium sized
  • Baking Powder: 16 gr. (0.56 oz) (I said yeast on the video, but meant to say baking powder!)
  • Powder Sugar: 1 or 2 tbsp just to sprinkle over the cake as decoration.
  • Circular cooking pan about 30 cm. wide

Preparing the Apple Cake Filling

Cut the apples into little squares.  Mix apples, cinnamon and sugar.  Set apart, this will be used later as the filling.

Preparing the Apple Cake Batter

Pre-heat the oven to 350° F.

Place the egg and sugar in a bowl and start mixing until the sugar is completely dissolved and the batter becomes fluffy and light yellow. While mixing, add the orange juice, then the Papa Vince EVOO and finally the vanilla.  

Add the flour one spoon at a time, making sure that no lumps are formed and then add the baking powder.

Grease a pan with butter. I recommend using a rectangular cake pan about 2 1/2 inches deep.

Add 1/2 of the batter to the pan.  Add the Apple Cake Filling (above) evenly.   Pour remaining batter over Apple Cake Filling.

Bake at 350° F for 70 min. Do not open the oven during the first 25 min.
