Pasta fagioli, or a soup made with pasta and beans, is a staple for most Italian families. The beauty of this soup is how each family and often, each family member, has their own versions. Variations include using pork, sausage, chicken broth, and different types of beans, such as Navy or Cannellini beans. 

This version of Pasta Fagioli is packed full of vitamins and nutrients from the vegetables, Papa Vince tomato sauce and EVOO, as well as creating a complete protein from the combination of the beans and pasta. Quick and easy to make for a healthy weeknight dinner, it comes together in less then a half hour.

This is a recipe that chef Filippa made for us at her restaurant in Messina.  Her daughter came up with the idea to wrap the king prawns in spaghetti, they loved how it tasted and have been making it ever since.  Of course she lives right on the coast of Sicily and has the best of the fresh catch to cook everyday.  We loved the crunchiness of the spaghetti with the meaty king prawn, absolutely delicious!

We met chef Filippa in Messina, Sicily who showed us how to make a quick & simple pasta dish that you can easily recreate at home.  The Papa Vince Extra Virgin Olive Oil (EVOO) and tomato sauce give a beautiful golden finish to the sauce and allow you to experience the flavors of Sicily from any place in the world. We had fun filming with her in her restaurant but she wished that our camera could pick up the aromas from the kitchen.  You'll just have to try the recipe for yourself or come to Sicily with us.

We met chef Filippa in Messina, Sicily who showed us how to make a real squid ink spaghetti.  She told us that her grandma taught her how to make it and it's a common recipe where she lives, in fact she makes it in her restaurant everyday.  It's not that difficult you just need fresh squid and the best quality Extra Virgin Olive Oil and tomato sauce and then the flavor is exquisite!  Filippa loved making her recipe with Papa Vince products because the EVOO made the pasta shine and the tomato sauce is not acidic, it's the quality that counts!

In English this recipe's name is Country Pasta.  It's a simple recipe that my mom grew up eating in Sicily, especially at harvest time when they would eat outdoors. The tasty sauce is made with fresh tomatoes and raw garlic which is so good for your health.  It's clean healthy food that can be eaten as part of the Mediterranean diet and it's suitable for Vegans and Vegetarians too.

This is a typical recipe from Sicily.  My mom grew up eating dishes like this and that's how she has taught me to cook and to eat!  Sicilians don't really eat a lot of meat, maybe once or twice a week.  They prefer to eat the ingredients that grow freely in the fields.  When my mom was growing up, my nonna would make home made pasta and they would pick the fresh olives and tomatoes in the fields.  Of course you need a good quality olive oil, just like Papa Vince!
