Vegetable Pasta with Papa Vince Tomato Sauce

Prep Time: 10 mins, Cook Time:  25 mins, Serves: 6 persons

We used zucchini as our main vegetable ingredient, you can use green beans or cauliflower or your favorite combination of vegetables.  We also like to add a lot of garlic, you can use more or less depending on your taste.
We also used 2 different types of pasta.  The shape is called Busiate which is traditional pasta from Sicily.  The darker pasta is made from tumminia ancient grain & has 6 times more fiber than regular pasta.  The yellow durum pasta is made from stone ground semolina which is high in nutrients and protein.

Ingredients:
1 large onion
4 cloves of garlic
2 lb zucchini
3 jars Papa Vince Cherry Tomato Sauce
1 lb Papa Vince Busiate Pasta, Durum or Tumminia (1 pack)
Papa Vince Sea Salt
Papa Vince Extra Virgin Olive Oil

Preparation

  1. Put water in a pot to boil to make the pasta.  Don’t add salt at this stage.
  2. Cut up the vegetables.
  3. Add some EVOO to a frying pan, at medium heat.
  4. Pan fry onions & then when slightly browned add the garlic.
  5. Add more EVOO as necessary.
  6. Add the tomato sauce and when it’s boiling add the zucchini slices.
  7. Cover the pot and let it simmer for 20 minutes until the zucchini is al dente (chewy & tender at the same time).
  8. When the water boils add some sea salt to the pot and then add the pasta.
  9. Stir the pot and cook at the same temperature for 10 minutes until the pasta is al dente.
  10. When you’re happy with the texture of the pasta, pour in a glass of cool water to stop the pasta from continuing to cook.
  11. Stir in some more EVOO to stop it from sticking, then stir the vegetable tomato sauce into the pasta.  Mix, serve and enjoy.

We met Teresa in Messina who invited us into her beautiful Italian home & showed us how to make some of her favorite family recipes.  This Linguine recipe is one that she started making just to get creative in the kitchen.  The combination of the anchovies and the omega 9 fatty acids in the Extra Virgin Olive Oil make this a health boosting recipe.  If you're concerned about the linguine and want a more nutritious option, why not use Papa Vince Tumminia Pasta which is made with ancient grain and contains 6 times more fiber than regular pasta.

Pesce Stocco
Pesce Stocco

by Esther Milne May 14, 2019

Pesce Stocco is an ancient Sicilian recipe that dates back to Norman times when Northern Europeans conquered Sicily and influenced their culture, landscape and cuisine.  Pesce Stocco uses stockfish which is fish typical from Scandinavia.

Vitina met Teresa in Messina who showed her how to make a lighter & healthier version of this popular dish.  She calls it a 'one pot fish dish!'  You can also use a different type of fish just be sure that it's a meaty fish or you'll find that the fish cooks quicker than the potatoes.  You know this dish is ready when the potatoes are soft.
