Real Italian Meatballs

This is a very simple recipe for making real Italian meatballs in less than 45 minutes.  We used ground beef but you can use ground turkey or even add in some vegetables.  Make sure you watch the instruction video, Chef Federico shows you how to make them like they do in Rome!

Prep: 20 minutes, Cook Time:  20 minutes, Servings: 4 persons

Ingredients
1 lb ground beef
1 egg
1 onion
2 slices of bread
1 clove garlic
1 jar Papa Vince Tomato Sauce
Papa Vince Extra Virgin Olive Oil
Papa Vince Busiate Pasta
Papa Vince Sea Salt
Black Pepper

Preparation
1. Put the ground beef in a mixing bowl with chopped onion & garlic (you can use the Papa Vince Peeler).
2. Add the egg and the whole pieces of bread (dip them in water first - watch Chef Federico in the video).
3.  Add Papa Vince Sea Salt & pepper.
3. Mix and knead the meat until everything is absorbed & it feels compact.
4. Make into approximately 20, small to medium sized meatballs.
5. Add Papa Vince EVOO to a pan on medium heat & gently fry the meatballs.
6. When the meatballs are cooked on the outside, add the Papa Vince Tomato Sauce to the pan.  Let it boil and then turn to low and simmer for 20 minutes.
7. Meanwhile cook the pasta.  Boil a large pot of water and then add Papa Vince Sea Salt.  Add the pasta & let it cook for 9 minutes.
8. Drain the pasta and add it back to pan with some of the tomato sauce to cook together for 1 minute.  The pasta will absorb the flavor of the sauce.
9. Serve with a meatball on top of the pasta, a little extra sauce & parmesan cheese on top.

This is a typical dish from Messina which incorporates so many of the fresh ingredients of Sicilian cuisine.  Recipes in Sicily vary so much by cities and regions and Vitina told me that despite visiting her family in Sicily so many times, this was the first time she ever experienced this dish.  Her family is from the Eastern side and the food is different!  This is a very popular recipe and is a creative way to make an eggplant spaghetti sandwich covered in rich tomato sauce, cheese and fresh basil.

We met Samuele in Messina, Sicily, a beautiful city where fishermen pull up every day with an abundance of freshly caught fish.  You can eat it in a variety of different ways and Samuele decided to make 'Pesce alla ghiotta' for us, which combines swordfish with some of the fresh local ingredients.  You can always use tuna or salmon steaks if it's difficult to find the fresh Swordfish, it's a recipe that fits perfectly into the Mediterranean Diet.
