Bruschetta with Capers and Mozzarella

This recipe makes a tasty appetizer for any event.  It's simple to make and it takes less than 10 minutes.  It's a twist on the classic bruschetta recipe!


Recipe:

  • Preparation Time: 10 minutes
  • Active Time: 10 min
  • Yield: 6 servings about 4 pieces

Ingredients:

Instructions:

(1) Cut Mozzarella Cheese into pieces to cover most of the slices of bread. 
(2) Drain capers. Place 2 or 3 small capers on top of the mozzarella cheese.
(3) Sprinkle ½ teaspoon Papa Vince Extra Virgin Olive Oil on top and just before serving so that it doesn't become too soggy.
(4) Squeeze a small dot of Papa Vince Balsamic Glaze on the very top and Enjoy!

Pesce Stocco is an ancient Sicilian recipe that dates back to Norman times when Northern Europeans conquered Sicily and influenced their culture, landscape and cuisine.  Pesce Stocco uses stockfish which is fish typical from Scandinavia.

Vitina met Teresa in Messina who showed her how to make a lighter & healthier version of this popular dish.  She calls it a 'one pot fish dish!'  You can also use a different type of fish just be sure that it's a meaty fish or you'll find that the fish cooks quicker than the potatoes.  You know this dish is ready when the potatoes are soft.
