We met Teresa in Messina who invited us into her beautiful Italian home & showed us how to make some of her favorite family recipes.  This Linguine recipe is one that she started making just to get creative in the kitchen.  The combination of the anchovies and the omega 9 fatty acids in the Extra Virgin Olive Oil make this a health boosting recipe.  If you're concerned about the linguine and want a more nutritious option, why not use Papa Vince Tumminia Pasta which is made with ancient grain and contains 6 times more fiber than regular pasta.

Pesce Stocco is an ancient Sicilian recipe that dates back to Norman times when Northern Europeans conquered Sicily and influenced their culture, landscape and cuisine.  Pesce Stocco uses stockfish which is fish typical from Scandinavia.

Vitina met Teresa in Messina who showed her how to make a lighter & healthier version of this popular dish.  She calls it a 'one pot fish dish!'  You can also use a different type of fish just be sure that it's a meaty fish or you'll find that the fish cooks quicker than the potatoes.  You know this dish is ready when the potatoes are soft.

Sicilians like to eat fennel at the end of a meal to aid digestion and when paired with tangy orange, it makes a light & refreshing salad, half fruit, half vegetable!  

We have our own version of this salad but we met Genni in Messina and she served it to us with pine nuts, raisins and pumpkin seeds which add some crunch & extra nutritional benefits.  It's definitely a recipe to try over the summer season!

This recipe is a perfect combination of sweet and spicy.  Apples play the star role, providing lots of vitamin C and natural fiber, they are paired with arugula which is packed full of phytochemicals. Papa Vince EVOO and Moscato vinegar also play an important role, livening up the ingredients and adding multiple health benefits, such as providing heart-healthy antioxidants. The salad is topped off with walnuts, which are a great source of Omega 3 and add some extra crunch!

This is a versatile creamy white sauce that is used in a variety of different Italian dishes or can be used as a base for other sauces.  One of our Sicilian chefs, Gienni showed us how to make it because she used it in the Eggplant Doublets dish she prepared for us.  Gienni added Parmesan Cheese, you can use other flavors or make it plain, it all depends how you're planning to use it.
