How to make Apple Cake with Raw Extra Virgin Olive Oil:



  • Preparation Time: 1 hour & 40 minutes
  • Active Cooking Time: 50 min
  • Yield: 10 servings





  • Flour: 200 gr (7 oz.)
  • Sugar: 150 gr (5.29 oz.)
  • Eggs : 3
  • Milk : 125 gr (4.41 oz.) Yes, you do have to weight the milk!
  • Yellow Apples: 4 medium sized
  • Baking Powder: 16 gr. (0.56 oz) I said yeast on the video, but meant to say baking powder!
  • Powder Sugar: 1 or 2 tbsp just to sprinkle over the cake as decoration.
  • Circular cooking pan about 30 cm. wide




Preparation: Watch the Video!!!


  1.  Remove the skins of the apples with a sharp knife cutting off the skins in a spiral fashion
  2. Cut the apples in half and half again, ending with 4 slices per apple. Then take the quarter-apples and slice off the inner core of the apples with very straight remaining sides after slicing off the edge of the quarters with the core seed remains. The cut must result in a very flat side for the apple to be able to stand on evenly on the pan.
  3. After removing the core remains, take the apple-quarters and cut each piece in half. Make 4 incisions on the rounded side of each eighth of the apple as shown on the video. Do the same for each piece.
  4. Put 1-2 tsp. of Extra Virgin Olive Oil within your cooking pan and spread it all around the bottom AND edges of the pan, spreading it with a thin paper towel.
  5. Add some flour next to the pan, lifting it and turning the pan so that the flour spreads and covers all of the pan. Remove the loose, extra flour from the pan by turning it over and letting it fall out.
  6. Add the whole eggs and sugar to a mixing bowl and mix those ingredients with an electric beating mixer.
  7. When the mixture begins white and frothy, add the olive oil, and beat again.
  8. After thoroughly mixed, add the milk and beat again. After thoroughly mixed, add the flour. Beat again and mix thoroughly, once again. Lastly add the baking powder and beat again throughout.
  9. Heat the oven to 355 degrees F.
  10. Add the liquid mixture just beaten from the mixing bowl to the cooking pan that has been prepared with olive oil and flour. Make sure the liquid mixture spreads evenly across the pan.
  11. Place the flat side of the apples in a spiral fashion inside of the pan standing up on top of the mixture. Put thicker pieces along the edge first.
  12. Place the pan within the oven and bake for 35-40 minutes.
  13. Remove the cake and top with sifted powdered sugar.
