Eggplant Parmesan (without frying!)

I love Eggplant Parmesan.
Indeed, it is my favorite recipe. However, because most restaurants use low quality oils, I restrain myself from ordering it out at a restaurant.

This recipe will show you how to make Eggplant Parmesan without ANY frying involved!

This recipe is EASY, SIMPLE, LIGHT and SUPER DELICIOUS!
I used Papa Vince's Extra Virgin Olive Oil and Papa Vince's Sicilian Cherry Tomato Sauce.
You can use other brands, but I doubt it will taste this good!!

  • Preparation Time: 90 minutes
  • Active Cooking Time: 30 min
  • Yield: 4 servings

 

Ingredients:

  • 6 small white eggplants
  • 1 spoonful of Papa Vince Parsley Pesto (CLICK HERE to see recipe)
  • 4 spoonfuls of Papa Vince's Raw Extra Virgin Olive Oil
  • 1 bottle of Papa Vince's Sicilian Cherry Tomato Sauce
  • Salt to taste
