Capers-and-Mozzarella

Did you know that the island of Pantelleria has the best capers in the world? They just grow everywhere, even on the steps of a hotel we have visited there! This appetizer was inspired after that beautiful island. Enjoy it.


How to make a caper and mozzarella appetizer
Recipe:

  • Preparation Time: 10 minutes
  • Active Time: 10 min
  • Yield: 6 servings about 4 pieces

Ingredients:

  • 3 ½ fl.oz (104 ml) Capers
  • 8 oz Mozzarella
  • 3 Tbsp Balsamic Glaze
  • 5 Tbsp Papa Vince EVOO
  • 1 loaf of bread Bread of choice (preferably French Banquette)

Instructions:

(1) Cut Mozzarella Cheese into pieces to cover most of the bread slice. (preferably Mozzarella di Bufala)
(2) Drain capers. Place 3 or 4 small capers on top of mozzarella cheese.
(3) Sprinkle ½ teaspoon Papa Vince Extra Virgin Olive Oil, just before serving to avoid becoming soggy.
(4) Squeeze small dot of Balsamic Glaze; very little is needed - it is very sweet. (5) ENJOY!
